Easy powerballs for at home or on the go

 Chocolate cashew cranberry energy balls

(20 pcs)

(allergens: nuts)

(vegan, lactose free, refined sugar free)

    • 120g raw or roasted unsalted cashew nuts 

    • 130g pitted medjool dates (about 20pcs)

    • 60 g dried cranberries 

    • Pinch of salt

    • 100 g dark or semisweet chocolate (chips or finely chopped)

  • Place cashews in food processor and pulse until they're chopped in small pieces, but not as fine as flour. Remove from the and transfer into bowl to set aside.

  • Process dates until they are in small pieces. This will be quite sticky.

  • Add the cashews back, together with cranberries, chocolate chips and salt. Pulse until well combined. 

  • Form the mixture into 2cm balls using 1tbsp measuring spook or ice cream scoop to portion it.
